I know that many people have looked up ways to cook pork shoulder in this delicious and filling pork shoulder slow cooker, but I want to show you how to cook it in a pressure cooker.

Ingredients and Equipment
On a dry day with no wind or rain, cooking time for a 8 pound pork shoulder is approximately 1 to 1 1/2 hours in a 450 F. oven. A common sense suggestion is to have your meat at room temperature, or within about 5 degrees of the desired temperature. If the temperature is below about 160 F, the food will tend to be dry. The ideal internal temperature for the pork shoulder is 170 to 180 F. This can be achieved by placing the meat in a roasting pan in the oven. Just be sure to make a rough temperature check at two different locations on the roast. Remember, the temperature will continue to rise, so the checkers should be about 4 inches away from the top of the roast. It’s a good idea to use a meat thermometer that reads to 170 F, such as one of these.
Shoulder or Butt
The shoulder is a large muscle located on either side of the animal. Typically, the shoulder is cut from the forequarter, which includes the front leg, the neck, and the shoulder. When cutting a pork shoulder, make sure to remove excess fat. The shoulder can be cooked on the bone, or cooked without the bone. To cook the shoulder on the bone, place the shoulder in the smoker, rub it with a good amount of kosher salt, and smoke it for about 6-8 hours at 180°F. To cook the shoulder off the bone, rub it with a good amount of kosher salt, place it in the smoker, and smoke it for about 8-12 hours at 190°F. When the shoulder is cooked, remove it from the smoker and let it rest for about 20 minutes. Then, chop the shoulder into slices.
Cooking Time
A pork shoulder can take anywhere from 5-8 hours to cook, depending on the size of the shoulder and the temperature. At the low end of the range, a pork shoulder can be cooked for 5-6 hours at 350-375 degrees. At the higher end of the range, the pork shoulder can be cooked for 8 hours at 350-375 degrees. The final temperature will be determined by the rate at which it is cooking. The low end of the range will be slower than the high end, so the final internal temperature will be lower. As it cooks, the pork will be covered to ensure that it does not dry out.
Cooking and Waiting Time
Let’s talk about cooking. It’s a good skill to learn because you get to control the temperature of food. The process is essentially the same whether you’re cooking meat or vegetables. Generally, the higher the temperature you put food in, the faster it will cook. But food cooks at different rates. Meat generally cooks faster than vegetables. It’s best to use an instant read thermometer to know when your meat is done. The best temperature to cook meat is the “rare to medium rare” temperature. This is somewhere between 140 and 165 degrees F. The general rule of thumb for how long to cook meat is that the higher the temperature, the shorter the cooking time.
