Cuts Of Beef
There are two main types of beef, the flank and the chuck. Flank is usually a less fatty cut, and it’s what you see when you buy a steak at the supermarket. Chuck is the same thing, but it’s a little fattier. The most common cuts are top round and bottom round. Top round is the highest quality of all the beef cuts. It’s a very lean cut, and it’s good for making roasts and patties. Bottom round is lower quality than top round, but it’s still a very good cut. These are typically cut across the bottom of the rib, and it’s also a good choice for roasts. Boneless chuck roast is the leanest and least expensive option. Because it has no bone attached, it’s cut across the grain. It’s not as tender as other cuts, but it can be used for braises and stews.
