Bake at 375, check every 10 minutes. Fish is done when it pulls away from the bone. You’ll need some tarragon, sherry, water, and butter. To make a pan sauce, put the pan on medium heat and stir in 2 tablespoons of butter. Add a few teaspoons of water. Pour in 1/3 cup of sherry and let it bubble away for 1 or 2 minutes, then add 1/3 cup of water. Add in 3 or 4 teaspoons of chopped tarragon, and the rest of the butter.
