I love sweet potatoes! It’s one of my favorite vegetables. You can roast them in the oven or boil them in the microwave. The main problem with them is the time it takes to cook them. Most recipes call for long cooking times of 40 minutes or more. As an impatient person, this is just not an option. I came across a video on YouTube which showed how to bake sweet potatoes in a foil packet at 375 degrees for 25 minutes. This worked great! The end result was a sweet potato that was cooked to perfection. The only problem was that I didn’t have a means of measuring the time! I had to watch the video and take my best guess.
