Then I’m gonna turn down to 250 and at 4 minutes and after 5 minutes at 225 and then at 7 minutes, I’m gonna turn it off. What I want to do is see if I can go from 400 up to 275 and see how long it takes and also see if I can go from 275 up to 400. So, when we first get in the oven, what we’re gonna do is we’re gonna put it on a cooling rack because we don’t want to touch the hot side of the salmon. So, let’s go ahead and crack it open. I’m going to put the instant read thermometer on the top. We’re gonna hold it in place and we’re gonna look at it to see what the top is read.
