Get the Whole Beef Leg Quarter on your table, a roast is much easier to get right. Remove the blood vessels from the leg quarter before cooking, then season the leg quarter generously with salt and pepper. Heat your oven to 450 degrees, place the preheated leg quarter on a rack in a roasting pan, and cover with foil. Turn the oven down to 400 degrees. Roast the leg quarter for 25 minutes. Open the oven, flip the roast over, then roast for another 15 to 20 minutes, or until the internal temperature is about 130 degrees. Remove the pan from the oven, cover with foil, and let the leg quarter rest for about 20 to 30 minutes. As the roast rests, the interior will continue to heat up.
