I actually made these in the oven today to take with us for a camping trip, but they worked out great! Cooking chicken breasts in the oven helps to seal in the juices and keep the meat moist. It is also a great cooking method for those who do not have an oven. If you prefer to cook your chicken using a broiler, the cooking time will be very similar.
Why Baking Chicken Breast?

Can I Bake Chicken Breast Whole?
Not really. You can bake chicken breast cutlets or chicken breast halves, but for whole chickens you need a different oven. The best way to bake chicken breast is to cut it into a few pieces. You can then take the breasts and place them into a foil tray and bake them in a 450 degree oven.
Chicken Breasts Recipe
Ingredients: 2 lbs. boneless chicken breast halves
1 small onion, minced
2 tbsp. olive oil
1 small garlic clove, minced
1/2 tsp. salt
1/4 tsp. freshly ground pepper
2 tsp. paprika
1/2 cup dry white wine
1/4 cup chicken stock
2 tbsp. chopped fresh basil
1. Preheat the oven to 350 degrees F. Grease a 12-inch cast-iron skillet with 1 tablespoon of the oil and set it aside. Place the chicken in a bowl and drizzle with the remaining 1 tablespoon oil. Add the onion, garlic, salt, pepper and paprika. Massage the seasonings into the chicken. Place the chicken and onion mixture in the prepared skillet. Pour in the wine and stock. Scrape the skillet and remove any pieces of onion that might be stuck to the bottom. Cover the skillet with a tight-fitting lid. Bake the chicken until an instant-read thermometer inserted in the thickest part registers 165 degrees F, about 30 minutes. Remove the lid and continue to bake, uncovered, until the chicken registers 170 degrees F, about 15 minutes longer. Uncover and let the chicken rest in the pan for 5 to 10 minutes. Using a wide spatula, transfer the chicken to a serving platter. Serve the chicken with the basil sprinkled over it.
