Lately, I have been baking chicken and it seems like it takes forever to bake at 450. As it has been so dry out here in Southwest Virginia, I can’t seem to bake the chicken with skin and I haven’t been able to figure out why that is. I love chicken, but I’m not sure if it’s worth it to make it. So, I would appreciate any help with this.

when i was in school there was a chef i used to know, he used to tell me that the best way to test the doneness of a chicken is to insert a meat thermometer into the breast. they were wrong the way they are doing it. you have to insert a digital probe into the chicken that will go up to 160 degrees, i dont think they think to high of people.
