Asparagus has a long season, but it’s no longer a perennial. Starting in August, asparagus can be stored, protected from the short California winter by, for example, placing it in a row of hardy vegetables, such as broccoli, for a couple of months. If it’s a tender, young, tight-leaved variety, asparagus is best eaten immediately after harvest, or as soon as possible after the first frost. To be safe, though, cook it quickly: Whole or thick asparagus will cook in about 6-10 minutes, depending on the thickness and how old the asparagus is. Choose thicker asparagus and cook a little longer. The stems of the thin-leaved, variety are usually tender enough to eat right out of the garden, but you should cook them for less time. Young, tender stalks are best eaten raw, but if you like, you can steam them briefly, drain them, and serve them with a drizzle of olive oil, lemon juice, and a sprinkle of salt.
