Spray a deep-fat fryer with nonstick cooking spray, and heat until hot. Put flour, biscuit mix, all-purpose flour, salt and pepper in medium mixing bowl. Add eggs and mix well. Stir in chicken. Drop chicken into hot oil, two pieces at a time, and fry for 4 minutes or until golden brown. Drain on paper towels. Serve with Ranch salad dressing.
