However, there are some instances in which you can successfully freeze and bake sweet potatoes.

How long should sweet potatoes be stored? This depends on the type of sweet potato. However, they are best stored in a cool, dark place. Some experts recommend storing them in the refrigerator for two weeks, or in the freezer for six months. These times are recommended only for decorative sweet potatoes. The bitter skin of a regular sweet potato should be removed before storing. Removing the skin will help keep the sweet potato firm, prevent mold, and allow it to cook more evenly.

Can I Can Potatoes Once They Are Baked?
This is especially important with sweet potatoes. It’s best to cook them on the stove top, because they’re much easier to peel. Simply prick a hole in the sweet potato and microwave for 10-15 minutes. Once done, take the sweet potato out of the microwave and peel the skin away. With potatoes, you can continue to cook them once they are baked. You can also do this with bananas. Simply pierce a hole in the top of the banana with a fork, and place in the microwave for about three minutes. This will help soften the fruit, making it much easier to peel. Now you can enjoy a banana for breakfast.
