Rearing time is a significant factor in determining the tenderness of a roast. A longer roasting time will result in tougher meat. For example, if the roast is left to cook for 40 minutes, there is no way to tell if it has reached the desired tender state. If the meat is allowed to rest for 15 minutes after cooking, this will allow the internal temperature to return to normal. This is called the “resting time.” The USDA recommends that the resting time be no longer than 2 hours. However, many recipes call for 1 hour or less.
