Grilling fish over an open flame is a great way to cook the meal. However, grilling fish is different than grilling meat or poultry, as it may require some preparation. First, fish should be cleaned. Remove all the scales and gills by running them under warm water and scraping the meat with a spoon. Rinse the fish again. This is particularly important if the fish is going to be used with the head, which contains a gills that could carry bacteria. After the fish is cleaned, it needs to be preheated. The oven works great for this, but you can also grill the fish on a charcoal grill or gas grill. Next, season the fish with a marinade. Use a simple salt and pepper blend, or try one of the classic marinades for fish. Choose a flavor that tastes good to you. To be safe, make sure that the fish has been thoroughly cooked. To check, remove the top fillet and see if it flakes when lightly prodded with your finger. If it doesn’t, put the fish back on the grill and cook it for an additional 5-10 minutes. Remove the fish and serve immediately.
