Ingredients for boneless chicken thighs
Boneless chicken thighs usually take around 1 hour to cook. Ingredients for this recipe include:
* 1/2 pound boneless chicken thighs
* 2 tablespoons minced onion
* 1/2 teaspoon cayenne pepper
* 3 tablespoons dried parsley
* 2 teaspoons kosher salt
* 2 teaspoons garlic powder
* 1 teaspoon ground black pepper
* 1/4 teaspoon ground cumin
* 3 tablespoons olive oil
* 3 cups chicken broth
* 1 tablespoon tomato paste
1. In a large bowl, combine onions and cayenne pepper. Stir in parsley.
2. Add chicken, salt, garlic powder and pepper, and mix well.
3. In a large skillet, heat olive oil over medium heat. Brown thighs, about 5 minutes on each side. Transfer thighs to a plate.
4. Add onions to skillet. Stir in cumin. Cook, stirring constantly, until onions are softened, 2 to 3 minutes. Add tomato paste, stir, and cook until slightly darker and fragrant, about 2 minutes.
5. Add broth and bring to a simmer. Return chicken to skillet, cover, and simmer for 30 minutes.
6. Remove chicken from skillet.
7. Remove thighs from bones. Chop into bite-sized pieces. Discard bones.
8. Add chicken to sauce and cook, uncovered, until heated through, 5 to 10 minutes.
