Rare lamb will take anywhere from four to seven hours. If you’re going for the most tender lamb, cook it to an internal temperature of 145 degrees Fahrenheit. This will take around five hours. If you don’t have a meat thermometer, you can tell by inserting a meat fork into the meat. The fork should move easily through the lamb, but if it gets stuck, the meat is not done.
