In addition, McGee says, “At 180°F, chicken is cooked—that is, it will have stopped absorbing water and started to cook.” So, he says, if you’re cooking chicken for 20 minutes, “you have no reason to continue cooking it at 350°F, which will make it turn dry.” This is because the heat will only continue to cook it. Instead, the temperature should be lowered once the meat reaches the 165°F/75°C temperature. Some people cook chicken for a longer time in order to make sure that it is done. McGee says, “Cooking for 20 minutes is much longer than necessary, so you could shorten it down to 10 minutes or less.”
