Test meat at 160degrees for best doneness

For best doneness, you can cook pork to an internal temperature of 160 degrees F. That may sound a little high, but cooking meat is a tricky thing. Especially for something as large as a pork roast. If you cook the pork too high or too long, the meat will be dry and tough. You don’t want to dry your roast out by cooking it too much, but if you cook it too low, the meat will be tough. To get an accurate measurement of internal temperature, you need a probe thermometer. These thermometers are easy to use and can measure the internal temperature of a roast to within a few degrees. Test it after 45 minutes in the pan to see if you need to add more liquid. You want the liquid to cover most of the meat, but not drape over it. If the liquid covers the meat and the roast starts to look dry, it’s time to add more liquid.
