I see so many recipes that say “bake for 2 hours at 425 F” or whatever temperature. I always question why the baking temperature isn’t given. Unless you are baking a frozen chicken, my answer is you cannot bake a 5lb chicken at 425 F. I usually bake my 5lb chicken at 500 F for around 1 1/2-2 hours. I prefer to use a meat thermometer to test for doneness instead of the traditional “jiggle the bird” method. I do this even if the cooking time is on the longer side. If the bird is still not done I will give it another half hour. I use a meat thermometer (I love the Thalatronic meat thermometer that I use) and I don’t pull the chicken out until the thermometer reaches 165 F, I find 165 F is a good balance of moist and done. Sometimes I will use a different thermometer but it is always very close to 165 F.
