1 cup ricotta cheese
2 cups shredded mozzarella cheese
Directions: Heat oven to 350 degrees F. Grease a 9-inch square baking dish with cooking spray or oil. Combine ground beef, carrots, onion, zucchini, bell pepper, garlic and mushrooms in a large mixing bowl. Season with basil, salt and pepper. Mix well, using your hands. Spread mixture into prepared baking dish, forming a thick layer in the bottom. Spoon cottage cheese evenly over meat mixture.
Bake at 350 degrees F for 35 minutes, stirring occasionally, until heated through. Spread one layer of noodles over cottage cheese mixture. Spoon remaining meat mixture over noodles. Sprinkle with ricotta and mozzarella cheeses. Bake at 350 degrees F for 30 to 35 minutes,
