If you want to prolong the time of marinated food, you should cook it for longer. You can also add salt to increase the shelf life of your marinate. For example, if your meat is already marbled, adding a little salt will help prevent the formation of lumps. Adding a small amount of salt when you marinates your food will also help preserve the flavor of what you are marining. This is especially important if the product you plan to sell is going to be consumed raw.
Is it OK to marinate steaks for 3 days?
You can only marinade meat for 2 hours before you cook it – otherwise, bacteria will grow and spoil the taste. But you shouldn’t marinated meat too long either. Long story long, we don’t recommend marinading meat longer unless you want to get a really nice flavor out of it. We suggest marining meat only for no more than 12 hour before cooking.
