Place the chicken breast on a cutting board. On the underside of the chicken breast, you’ll find a thin area. You’ll want to score this area. Scoring the chicken breast allows the exterior of the chicken to get crispy and the interior of the chicken to get tender. After you’ve scored the chicken, you’ll place it breast side down in a shallow container. You’ll want to remove any excess pieces of fat, and pour about 1/3 cup of water into the container. The water will create steam. This steam will keep the chicken breast from drying out. You’ll want to place the container in the oven.
