For example, if it involves a fat like butter, which is rendered slowly, than you should season the outside of your meat after it has already been rendered. Doneness will be determined by the internal heat of meat, which can only be measured by a thermometric device. This device is used to measure the temperature inside the meat. If the interior temperature is too high, there is a risk of bacteria growth. On the other hand, if the exterior temperature reaches 160°F, this is considered safe. However, even though the outside temperature should be 160 degrees, sometimes it can get higher than that. Therefore, always cook ground meat to 160 degree F. Also, avoid cooking meat over 120 degrees F, since this can cause the formation of gas bubbles. When using a meat thermometre, ensure that the probe is placed in contact with the surface of flesh. Do not use the thermometers to test the inside of a cut of steak. Instead, use it to check the thickness of fat.
