The process for making enchilada sauce is pretty straight forward. First, you’ll need to prepare the enchilada sauce. Start by washing an onion, then chop it up. Next, heat the oil and add the onion to it. This will allow the flavors of the onion to come out better. After you’ve added the onion to the oil, add the chili powder, paprika, cumin, and oregano. Then, add the chicken broth and continue to stir the mixture until it starts to bubble. When the mixture has started to bubble, add the cream, ketchup, and tomato sauce and let the sauce simmer for about ten minutes. To finish the sauce, you’ll want to add some cheese and cilantro and serve it hot.

Bring to a boil and simmer 30 seconds or until spinach is tender. Let cool for 30 minutes. Serve with chips and shredded cheese.
