Pink salmon is best eaten raw, and we’re not going to lie, it’s a little expensive. Luckily, there are lots of creative ways to use canned salmon. You can use it in place of tuna, and it has a similar taste. The key is to sauté it until the fat is mostly gone, and then add in fresh vegetables and a sauce. We like to use a soy-based sauce, and lots of vegetables, but you can use whatever you like. One popular recipe is this. Preheat your oven to 400 degrees F. While your salmon is in the oven, combine 1 cup of soy sauce with 1/4 cup of honey and 3 cloves of garlic in a small saucepan. Place the salmon in a baking dish, cover with the sauce, and bake for 30 minutes. Add the rest of your ingredients, including 3/4 cup of thinly sliced bell peppers, 2 cups of broccoli florets, 1/2 cup of thinly sliced mushrooms, and 1/4 cup of shredded carrots to a large skillet. Cook the mixture on medium for 3 minutes, stirring frequently. Place your salmon in a serving bowl, top with the veggies and sauce, and serve.
