Ingredients
While not a traditional squash, spaghetti squash is very similar to the squash commonly known as zucchini. Instead of being hollowed out, it is usually cut in half lengthwise, and the seeds scooped out, leaving a spaghetti-like shape. Spaghetti squash can be white or purple in color. For the recipe, use a vegetable peeler to peel off the spaghetti strands to make spaghetti squash spaghetti, or use a paring knife to cut the squash in half lengthwise, scoop out the seeds, and then dice the squash into bite-sized pieces. You can then use a fork to scoop up the spaghetti strands to serve. Or, simply serve the squash as is.

What You’ll Need: 1) Spaghetti Squash 2) String Pasta 3) Broccoli Spinach 4) Parmesan Cheese 5) Spaghetti Sauce 6) Bread Crumbs
1) Prep the spaghetti squash
2) Cut it in half lengthwise and hollow out the center
3) Put the squash, cut side down on a plate and microwave it for about 8 minutes or until it is tender
4) Let it cool for a bit
5) Strain the spaghetti sauce from the can and put the bread crumbs and Parmesan cheese in a bowl
6) Put the spaghetti sauce into the spaghetti squash
7) Put the bread crumbs and Parmesan cheese on top of the sauce
8) Put it in the oven for about 25 minutes at 350 degrees
Cooking Tips
In a large pot or Dutch oven over medium heat, heat the olive oil. Add in the onion and a pinch of salt. Saute until the onion becomes translucent. Add in the garlic and saute for another 30 seconds. Add in the spaghetti squash and saute for 3 minutes or until you can smell the garlic. Add in the water and vinegar and cook the squash for an additional 2-3 minutes.

Spaghetti squash is one of the healthiest and most filling foods you can add to your diet. It’s a squash that is usually made from zucchini or yellow squash. Spaghetti squash is low in calories, making it a great substitute for noodles. It’s also a good source of fiber, vitamins, minerals and many antioxidants.
