One study found that instant-read thermometers can be inaccurate, so it’s best to use a real thermometer. When cooking salmon, you’ll want to know that the salmon is done. You’ll want to use your thermometer at the last minute of cooking, as the temperature will drop while the fish is cooking.

Scales are tough, so don’t worry about wasting your time on a scale that isn’t clean. If your scale is broken or if it’s not clean after a couple of rounds, throw it away.

Remove the fish from the heat with tongs or a fish spatula. 5. Place the fish on a cutting board, skin side up. 6. Insert the paring knife parallel to the bottom bone. 7. Cut along the top edge of the bone until the knife hits the backbone. 8. Then gently pull the backbone away from the fish, starting at the back edge and pulling it towards the cutting board. 9. Turn the fish on the cutting board, bone side down, with the top of the tail down. 10. Peel the skin away with your fingers and hold it back with the other hand.
