We put the meat in before it reaches the desired internal temp. If we don‘t put this in until it gets to about 145 degrees, we will get a nice pink color. But if we wait until the temperature is above 145, there will be no color change. And if the temp is below 145 after we take it out, well, that‟s what we call „cooked‖. So, you need to keep track of how long you cook it. You should also add salt and pepper to taste. Also, make sure you let it rest for about 10 minutes before serving it to make it easier to eat.
Should you rinse corned beef before cooking?
If you buy a raw corndog, don’t rinse it immediately after cooking. Rather, let it sit out overnight to allow the salt to absorb into the fat and meat. This will make the taste of your cornse beef less pronounced. You can then cook the corns over low heat until the desired doneness is reached. Rinses should be done under cold running water. If using a corncob, you’ll need to rinse off the outer layer of meat before roasting.
Is it better to boil or bake corned beef?
Cooking over high heat tends to toughen meat, while cooking over lower heat helps tenderize it. Both methods are fine for corns, though. If you want to cook corn well, either way is fine. But if all you’re after is tenderness, you should cook the meat over moderate heat, which will help it cook evenly and reduce the risk of overcooking. And if nothing else, boiling will make sure that the internal temperature of your corncobs stays above 140°F (60°C). For more information, see Corned Beef FAQ.
