You can do this in the refrigerator. Next, you need to remove any excess skin. Then, trim the excess fat and scale the breast. You can use poultry shears to do this. Slice off any excess fat. Season the duck breast, using the recipe below, and brush the skin with oil. Wrap the duck breast in foil. Place the duck breast and foil package in a shallow roasting pan. Add some rosemary to the bottom of the pan. Roast the duck for 50 minutes. Rotate the pan so that the top is on the bottom of the oven. Roast the duck for another hour. You should be able to remove the duck from the oven when the meat reaches an internal temperature of 120 degrees Fahrenheit. You should be able to tell this by inserting a thermometer into the center of the duck breast. Remove the duck from the oven. Let the duck breast rest for 20 minutes.
Roast Pork
Now that you have your ingredients, it’s time to cook the roast. If you’re looking to cook this roast at home, then there are a few things you should be aware of. First, you’ll want to use a thermometer to ensure the meat reaches a safe internal temperature. Make sure that you insert the thermometer into the thickest part of the roast, as you want to ensure that it gets the best heat. Next, you’ll want to remove the roast when it reaches the safe internal temperature, and let it rest for 15-20 minutes. This will help to reduce the cooking juices and allow the roast to sit a bit. However, if you don’t let it sit for long, it may become too dry. Once you’re ready to slice and serve the roast, you’ll want to let the roast rest for about 10-15 minutes before cutting. This will allow the juices to redistribute and ensure that the roast stays moist. Lastly, to help preserve the flavour of the roast, try adding a few different things to the roasting pan. These might include apple juice, garlic, onion, fresh herbs, or even something savoury, such as an anchovy.
