Tuscany chicken is an Italian dish made from chicken breasts. This dish is traditionally made with chicken thighs. But you can make it with breasts if you prefer. You can also substitute the thighs with bacon, or even shrimp. This chicken dish is made with the skin left on. The chicken is then marinated and roasted in a Tuscan olive oil. This dish is served with Italian romanesco squash and a side of rosemary potatoes. You’ll find this dish in the Piedmont region of Italy, where the weather is cooler and the fresh rosemary is readily available.
How to Make Tuscany Chicken
When you go to a Tuscan restaurant, you may notice that it’s always served with bread and olive oil. Tuscany is located in the Siena region of Italy, and its cuisine has a lot in common with that of the Sienese, including a traditional love of bread. However, unlike other Italian regions, Tuscany doesn’t have much in the way of wheat. Instead, it has a lot of olive trees and its own type of wheat, called tritole. It’s traditionally used to make pasta and bread. The main ingredient in Tuscan chicken is also a tritole. The flour can’t be used to make any other type of bread, but it can be ground into a fine powder to create a flour that is only one-fifth as thick as regular wheat flour. A thicker flour makes it easier to roll out pasta dough, and if you roll it out to the right thickness, it’s the perfect size to make chicken!

Ingredients: 4 large skinless chicken breast, pounded with a heavy pounding tool to 1/4″ thickness 1/2 cup
fresh basil, torn 1/2 cup fresh flat-leaf parsley, torn 1
tbsp. grated lemon zest 3 cloves garlic, chopped 1/2 cup extra-virgin olive oil 1 1/2 cup red wine vinegar 1/2 cup
chicken stock 2 bay leaves 1 1/2 tsp. kosher salt 1 tsp. ground black pepper 3/4 tsp. crushed red pepper
flakes 3/4 tsp. sugar 1/4 tsp. freshly ground white pepper 1/4 cup toasted pine nuts Instructions: Place chicken breast in the bowl of a food processor and pulse until slightly smaller than a golf ball. Place
ingredients into the bowl of a stand mixer. Add the chicken breast and mix on medium speed for about 3 minutes, stopping and
stirring occasionally. Then, in another bowl, add the extra-virgin olive oil, vinegar, lemon zest, garlic, and herbs. Mix together on medium-high for about 2 minutes. Then, place the chicken in the bowl and fold together until well incorporated. Serve on top of a bed of green salad or
use as a dip with breadsticks.
