How To Prepare
Ingredients:
2 cups of water
1/2 onion
1/2 cup carrots
1/4 cup celery
1/4 cup black pepper
1 cup nutritional yeast
1/4 cup olive oil
1/2 lemon
1/2 bunch of cilantro
1 teaspoon of salt
1 lime (optional)
Instructions:
Bring water to a boil in a large pot. While water is boiling, peel and thinly slice onions. Add onions to boiling water and cook for about 3-4 minutes. Remove onions from water with a slotted spoon and reserve. Add carrots to boiling water and cook for about 4 minutes. Remove carrots with a slotted spoon and reserve. Cut celery in half and add to boiling water. Cook for about 5 minutes. Remove with a slotted spoon and reserve. In a large bowl, combine carrots, celery, onions, pepper, nutritional yeast, salt, olive oil, lemon, cilantro, and juice of half a lime. Mix well, add the remaining half of a lime, if desired, then cover and let sit for 30 minutes. Enjoy with tortilla chips.
