This moist and juicy baked pork tenderloin recipe is cooked in a quick balsamic glazed made with onion, brown sugar, garlic and rosemary. You can leave out the rosemary completely, if desired, or use another fresh or dried herb like thyme, parsley or oregano. Serve this easy pork dinner with your favorite side dishes.

Ingredients


  • 2 pork tenderloins (about 1 1/2 pounds total)
  • 2 tablespoons olive oil
  • 1/4 cup chopped onion
  • 1/2 cup balsamic vinegar
  • 1 1/2 tablespoons packed light brown sugar
  • 2 cloves garlic, minced or pressed
  • 2 teaspoons freshly chopped rosemary (optional)


Here’s how to make it:


  1. Season the tenderloins all over with salt and pepper. Heat the olive oil in a skillet. Add the pork and cook until well browned on all sides. Put the meat into a large casserole dish.
  2. In a bowl, whisk together the balsamic vinegar, brown sugar, garlic, onion and rosemary. Pour the mixture into the skillet. Cook, stirring, about 2 to 3 minutes or until reduced by half and onion has softened. Pour the glaze over the pork.
  3. Bake the pork in a preheated 375-degree F oven for about 20 to 30 minutes, basting occasionally. Pork is done when it reaches 145 degrees F. Remove the pork and let it rest for 5 minutes before slicing. Serve with accumulated pan drippings.
