Can I Use Sugar Instead of Agave?
Sugarcane is high in glucose and fructose. In a raw form, the glucose and fructose are primarily broken down into lactate, acetate, formate and fumarate. These breakdowns can be used to produce butyrate or acetate. The body needs formate in order to be able to use glucose from glycogen stores for energy and acetate for energy and lipid synthesis. What’s more is that the breakdown of glucose and fructose into lactate and acetate are not accompanied by a loss of energy, which is normally the case when glucose is used. This makes sugarcane useful for biofuels and higher energy products. However, as described in the section above, high levels of glucose and fructose are broken down into lactate. This is not a problem for milk products as lactate is broken down by the body into lactate and glucose. This lactate is then used as an energy source by the body. With this in mind, it should be possible to convert sugarcane to other energy sources and make them dairy-free. However, there are a couple of problems with doing so. First of all, many of the dairy-free alternative sweeteners do not match the taste of sugercane at all.
