Step by Step Process
Ingredients: 1 lb. ground turkey, browned and drained
3 (12 oz.) bags of frozen corn, thawed
1 can of black beans, rinsed and drained
1 can of enchilada sauce
1 can of rinsed and drained tomatoes
1/2 cup red onion, chopped
1-2 jalapeno peppers, diced
1 tsp garlic, minced
1 tsp ground cumin
1/4 tsp black pepper
1/4 tsp salt
2 (10.75 oz.) cans green enchilada sauce
1 cup cheese blend, shredded
3 cups rice, cooked
1 (10.5 oz.) can condensed tomato soup
1 (16 oz.) container sour cream
Directions: Place a medium nonstick skillet over medium heat. Once hot, add ground turkey. Season with salt and black pepper, cook for about 10 minutes, or until fully cooked. If you like, drain the ground turkey. Preheat the oven to 350 degrees Fahrenheit. Place the ground turkey in a 3-quart slow cooker. Add the corn, beans, enchilada sauce, tomatoes, onion, jalapenos, garlic, cumin, and black pepper. Top with the cheese. Stir well. Cook on low for 6-8 hours. Add the green sauce and tomatoes and cook for an additional 30 minutes. Serve over rice.
