Do Oven Bags Reduce cooking time?
These bags work best when used with large birds or roasting chickens. By enclosering the bird, steam is trapped, reducing cooking times. This also helps the chicken retain extra juices, making it easier to slice and serve. Also, because the bags trap moist air, there is less chance of burning the skin. Finally, since the bag is sealed, any smoke or odor will dissipate before the final product is cooked. For larger roasters, consider using a bag with an oven-safe handle. If you do not have an appropriate handle, a small, non-oiled bag can make a great alternative. You can also use a large, heavy-duty plastic bag, filled with water, to create a roaster. To use this method, fill the bottom of a heavy pot with enough water to cover the entire bottom.

The corning beef should always be cooked to 160 degrees Fahrenheit for safety and proper internal temperatures. For optimum tenderization, cooking to 190 degrees F. is recommended. Do I have to put flour in an oven bag?
Flour must be included in oven bags to prevent splitting when meat is cooked. This is especially true when using a meat thermometer. If you don‘t add flour to your oven bag, you will likely see a small amount of liquid forming under your meat. You can avoid this by adding flour before you put your thermometers in place. However, if there is no flour in your bag and you are using your stove top, I would recommend adding a little flour. Otherwise, your cooking time will be shortened.

Do you Rinse corned beef before cooking?
Rather than buying a pre-cooked corndog, cure your fresh corns instead. You can make your corn taste great too! The trick here is to soak the corning beef in cold water for several hours to allow the salt to dissolve. This will ensure that the seasoning is completely absorbed by the beef. Then, proceed to cook the seasoned meat. Use the same method to cure meats such as pork, chicken, or turkey. If you want to save time, you might consider cooking your meat in advance. For example, if frozen meat isn’t available, thaw it out and cook it in salted water.
Is silverside or topside better?
Silvershaft is less lean than topside, making it a better choice for roasts. Top side is great for slow roasted meat, while Silver shaft is best for brisket. Both are great options for pot roasters. (See Top Side) The term Silver Shaft was coined by John Bower, who describes it as “a cut of meat that has a very lean, silvery appearance.” He says that the term was originally used to describe “the long, thin strip of fat that runs down the middle of a piece of roast.” He explains that this is what gives the meat its silky appearance.
