Ingredients: • 400g chickpeas • 2 red onions • 1/4 red bell pepper • 4 garlic cloves • 1/4 red chilli • 2 teaspoons cumin seeds • 4 tablespoons olive oil • 2 teaspoons kosher salt • 2 tablespoons harissa spice mix • 200g grated beetroot • 1 lemon • 2 teaspoons fresh thyme • Method: • Start by preheating your oven to 180°C/gas mark 4 • While your oven is preheating, cut the onions, pepper, and garlic into thin slices • Add your chickpeas, olive oil, cumin seeds, and salt to a large, shallow baking dish • Fry the onions, garlic, and chilli in a large, deep pan, stirring frequently, until the onions are soft and translucent • Add the chickpeas, spices, beetroot, olive oil, and harissa spice mix to the pan • Bake in the oven for 1 hour • Once the chickpeas are golden brown, pour the lemon juice over the top • Garnish with thyme, and serve • Enjoy
