How To Can Pickled Eggs?
Your grandmother probably did not teach you how to can, but the following canning pickled egg recipe may just change that. Pickled eggs are a traditional German dish. They are made by filling hard-boiled eggs with either vinegar, brine or a mixture of vinegar and salt. The eggs are then packed in sterilized jars and stored in a refrigerator for a few weeks. You can easily turn your favorite breakfast into a pickled egg dish. First, start by mixing 3 parts of mustard with 1 part of salt. Boil 6 eggs for 8 to 10 minutes and allow them to cool to room temperature. Once the eggs are cool, carefully remove the shells. Crack them open with the back of a spoon and remove the eggs from their shells. Mix the eggs with a mixture of the mustard mixture. Add pepper and season to taste. Pack the eggs into clean canning jars, cover and close tightly. Place the jars in a water-bath canner and bring the water up to a boil. Boil the jars for 10 minutes, and then let them stand in the canner for 5 minutes. Remove the jars from the canner, and then store them in the refrigerator for up to a month.

Then, the egg yolks are extracted and the white is used to soak in salt and vinegar, which helps preserve the eggs. After that, the egg yolks are mashed and fermented in salt and sometimes sugar. The end result is a salty, vinegary, yolk-free egg white that can be enjoyed as a snack, in sandwiches, or more.
