this is a super healthy baked sweet potato casserole made with cashews and white beans! i love the sweet potato, but i also really enjoy using beans in baked goods. this casserole is really moist and you wont miss the butter or oil. i used a small amount of coconut oil for a little more flavor and a lot of love. i love cashews, and i love beans as well, so this is a great combination!
