1 tablespoon garlic powder

1/4 cup thyme
1 teaspoon ground cloves
1. To prepare the casings, mix the pork fat, salt, pepper, spices, and 1 1/2 cups water in a bowl. With a meat grinder, grind the pork fat and seasonings to a uniform consistency.
2. Fold the pork fat mixture into the pork. Using the grinder, mix the meat into the fat to incorporate the mixture evenly.
3. Transfer the mixture to a large bowl. Cover the mixture and refrigerate overnight.
