As someone who loves to eat, there are times when I get frustrated with my food choices. I have a long list of foods that I cannot eat because of allergies or for health reasons. Every time I see a certain item, my stomach starts to tie into knots and I don’t know why. This usually leads me to react negatively to this food, and this could end up hurting my body in the long run. The process of constantly asking myself whether a certain food is good for me or bad for me is very tiring, especially when I am a busy professional who has so many other things going on in her life. Then one day, my friend told me about the Whole30 diet. The more I researched the Whole30 diet, the more it seemed like a solution to my food woes. So I decided to give the Whole30 diet a try, but it took me a few days to figure out how to follow the protocol.
Ingredients
1 sweet potato, cubed
3 cups of chicken
1/2 cup of broccoli
1/2 of an onion, chopped
1/2 of a cup of julienned carrots
1/2 of a red bell pepper, julienned
1/2 of a cup of celery, julienned
1/2 of a cup of cooked quinoa
1/2 of a cup of chopped parsley
1/2 of a cup of walnuts
Step by step instruction
Step 1. Bring to a boil and cook. Remove from heat and cover and let sit for 15 minutes. Bring to a boil again and cook for 3 more minutes.
Cooking Time
For the preparation and cooking time: This dish takes 20 minutes to cook. If you do this method, you will need 3-5 medium potatoes, 1 small sweet potato, and 1 medium yellow onion. You can use a little bit of olive oil, garlic powder and salt. This is the method that I used in this dish. I also used the whole30 diet, so I had to modify my recipes. I thought I might be able to make a dish that would work with my diet, but I am now taking baby steps. I may be able to try this in a few weeks.
