Chicken Breast Can Be Done Sous Vide At Different Temperatures

Sous vide is a cooking method where the food is cooked in an enclosed container which is then plunged into a water bath. Sous vide has two advantages over other cooking methods: It’s evenly cooked and doesn’t dry out the food like other methods. The key to sous vide cooking is choosing the right temperature and making sure that the food is in the sealed bag for a sufficient amount of time. A recently published article in Science found that food cooked sous vide at a temperature between 43ºC and 48ºC was more juicy and tender than food cooked conventionally at 90ºC.

Here is the exact recipe that I used for the sous vide chicken breast
Ingredients:
• 1 chicken breast
• 1 piece of asparagus
• 1/2 cup of white button mushrooms
• 1/2 cup of green beans
• 1/2 cup of green bell peppers
• 1/2 cup of sliced red onion
• 1/2 cup of baby spinach
• Salt and pepper
• 1 teaspoon of rosemary

What Temperature is Best for Chicken Breasts?

When choosing a temperature to cook your chicken breasts, it’s important to note that the internal temperature is best. To determine if the chicken is cooked through, place a thermometer between the bone and meat. There is a safe internal temperature for poultry, at which point you will not feel bone when you press down on the chicken breast. This is called 185 degrees F. To determine if the chicken is done, turn the chicken breast over so the thermometer is on the other side of the breast. If the internal temperature is at least 165 degrees F, then the chicken is done.
