One of the first questions I get asked when I talk about cooking is “should I bake an uncovered or covered dish?” I find this to be a somewhat silly question because there is no right or wrong answer. The big mistake people make when they use a covering for a dish is that they confuse the fact that you can put a lid on a dish with the fact that you must put a lid on a dish. In this video, I explain the difference between an uncovered and covered dish and how the coverings you use can influence the flavor of your baked items.

Cooking is a messy business. And making baked goods especially can get a little messy. That’s why it’s important to take care of your kitchen. If you don’t have a stove hood or a cover, this could be a fire hazard. This is especially true if you’re baking in a metal cookie sheet. And if you bake a lot, you might want to invest in a set of silicone baking mats. These are designed to protect the surfaces you’re baking on and help clean up the mess. They’re also dishwasher safe. If you don’t have a stove hood, you can also use a baking sheet to cover the oven. These come in different sizes and materials. Just make sure to read the instructions before using them. Otherwise, you might find yourself covered in water and with very sticky oven gloves.
Uncovering the pot
Whether you’re baking sweet or savory breads, you need to keep the baking dish free of moisture and sticky messes. And, that means covering the pot and leaving it uncovered. Sticky messes can form around the rim of the pot and interfere with oven heat and steam loss. If this happens, the bread won’t rise properly. But, this isn’t the only problem that’s caused by baked goods on your baking dishes. If you bake on ceramic, you may notice a buildup of carbonation from baking soda. If the dish becomes too acidic, the food may not cook properly and have a bitter taste. Additionally, sticky messes may cause a crust to form on the surface of the dish, which can interfere with proper heat transfer and can allow the dish to over-bake.

This will allow you to bake uncovered and avoid the taste of charcoal. However, if you don’t use a liner, you’ll end up with a baked pastry that looks like a charcoal briquette. To avoid this, lay down a nonstick baking pan to prevent the baked pastry from sticking to the liner.
