One of the first questions I get asked when I talk about cooking is “should I bake an uncovered or covered dish?” I find this to be a somewhat silly question because there is no right or wrong answer. The big mistake people make when they use a covering for a dish is that they confuse the fact that you can put a lid on a dish with the fact that you must put a lid on a dish.
