The Story
In 1932, César Chávez founded the United Farm Workers of America to improve the health and living conditions of farm workers. He believed that nothing was more important than access to healthy food and safe working conditions. He tirelessly fought for farm workers to earn the right to a decent job and a voice in their own workplace. After decades of fighting, farm workers finally achieved the rights to health care, vacation, and a chance to earn a living wage.

Rice
Rice is made from the seed of a grain plant called a rice plant. This seed has two parts, the grain and the hull. When the hull is removed, the endosperm is left, which is the source of the starch in rice. The endosperm is usually separated from the rice and sold as a separate food called rice starch or potato starch. The endosperm makes up about 65 percent of the grain of white rice and 65 percent of the grain of brown rice. The outer layer of the rice plant consists of a covering called the bran. The bran is much harder than the endosperm and it is mostly removed during milling. The bran contains an anti-nutrient called phytic acid, which is the source of the indigestible part of the grain that can cause problems in people with certain types of medical conditions.
