The goal of this recipe is to create a fluffy, chewy pizza dough. There are many things you can do to make this happen, so feel free to experiment. For one, you can use a stand mixer to mix the dough and create a lot of friction. This will ensure the dough gets mixed thoroughly, allowing gluten to develop. To also improve the texture of the dough, you can add gluten-free flour. If you want to make a gluten-free pizza dough, mix together 1 1/2 cups of oat flour, 1/2 cup of rice flour, 2 tablespoons of cornstarch and 1/2 teaspoon of xanthan gum. Next, combine this with 2 cups of room temperature water. Then, mix until combined. This is then kneaded for a few minutes until it becomes smoother. This dough can be refrigerated for up to 4 days. After you have your dough in hand, heat the oven to 500 degrees Fahrenheit. After your oven is ready, carefully remove the pizza pan from the oven. Now, you can brush olive oil over the dough, and then sprinkle with some cheese. If you’re going to top the dough with your toppings, wait until the pan is back in the oven.
