The cookies can also be made ahead of time and frozen. Once the cookies are frozen, they’re easy to cut. To make the cookies, you’ll need one large (12-by-18-inch) aluminum foil sheet. If you have a smaller sheet, the cookies will be too small. A kitchen scale will also help you scale the cookies. To make a whoopie pie, you’ll need chocolate cookies. One-third of a pound of semisweet chocolate will give you about 5 dozen cookies. Place the foil sheet in the freezer. To make the cookies, pour 1/2 cup of granulated sugar and 1/2 cup of flour on the foil and form the cookies. Freeze the cookies for 15 to 20 minutes.
