Remove the pork from the roasting pan and set it aside. In a stock pot, combine the pork drippings and the flour to make the roux. Cook the roux over medium heat, stirring it constantly, until it starts to turn a light brown, about 7 minutes. Once the roux is ready, remove it from the heat and whisk in the chicken broth and water. Add the onion to the gravy and cook it over medium heat until it starts to caramelize, about 7 minutes. Once the onion is ready, transfer the gravy to a gravy boat.
