: I put a rack in bottom of a roast pan. Then I cover the roast with the rack and place it in oven at 400 degrees for 15 minutes. After that I turn the meat to 325 degrees and let 30 minutes go by. I then remove the roasting pan and allow it to rest for 30 seconds before serving. Why I am not using dry seasoning is becasue I will be making a glaze outta it and I dont want it too dry.
