Otherwise, you can try to make yogurt without a yogurt maker.
How to stop yogurt curdling
When you are using fresh yogurt for a recipe, you may notice that it curdles in the fridge. This happens because the acid in lemon juice interacts with the lactic acid bacteria in yogurt. This is one of the reasons why you should keep yogurt in the fridge. The lactic acid bacteria also help to give yogurt its tangy flavor and gives it a long shelf life. If you don’t want yogurt to curdle, you may need to reduce the amount of lemon juice in the recipe. You can also use different acid levels, like lemon juice, lime juice, vinegar or even wine. You will need to experiment to see what you like the best. In the meantime, if you want to avoid curdling yogurt in the fridge, you can pour some boiling water over it to help separate the curds and whey.

What is curdling and why does it happen?

This happens when a protein in yogurt called lactose, interacts with acid and causes the protein to form a solid layer on top of the yogurt. When this happens, the protein turns into the acid-resistant protein that yogurt is famous for. To stop this process, keep the yogurt covered in its container for a long period of time, and heat it up before eating. If you keep your yogurt warm for more than three hours, you will not have to worry about it curdling.
