What Temperature Should Pork Cook To?

Pork is one of my favorite meats to eat. I love pork for its rich flavor and tender texture. For a pork roast or stew, I like to cook it at a relatively low temperature for about two and a half hours. This allows the pork to cook at a slow, steady pace and results in a beautifully tender pork roast. Once you’re ready to eat your pork, I recommend either allowing it to rest for at least 30 minutes before carving it, or it can be served immediately. Another way to eat pork, as is often the case, is to cook a whole cut of pork, including the belly, loin, and ham, and then chop it up. Either way, you’ll love the results.

Buying Pork

The difference between an A and an AA pork belly is in the temperature at which it cooks. The rest of the pig is the same for both. A pork belly should be cooked to 165 degrees F for 75 minutes, and the temperature at the thickest part should read 165 degrees F. To cook it to AA level, you need to cook it until the temperature at the thickest part reaches 180 degrees F. You can tell the difference in temperature by looking at a meat thermometer. So, don’t be fooled into paying for A pork when it’s really AA.

Most roasts have around five to six pounds of meat, which means you should be able to use the entire roast for a week or two if you’re careful. And, if you’re lucky, the bones will turn into stock.

Difference between P.E.T. and lower P.E.T. (gas)

As a general rule, for every 10 degrees F you go below 325 F, pork’s exterior will start to toughen up. There is an exception to this rule, however. Pork (and other meats) that have a higher P.E.T. (pork, 65-75) such as ham, bacon, and sausage should only be cooked to an internal temperature of 165 F. The reason for this is that the meat will toughen up too much if it is cooked to an internal temperature that is too high.
