Albumin is found in the blood of cows, but is most concentrated in the bovine liver. Scientists have long known that albumin is present in the meat of cows, but they have not been able to identify the exact protein until now. The study, published in the journal Angewandte Chemie, used a variety of techniques to isolate albumin from beef liver, create a map of albumin proteins that are made by different animals, and find that there are close homologues of bovine albumin in the livers of cattle, humans, and pigs.
