This recipe for chocolate truffles is a bit different than most truffles we’ve seen. The usual truffle recipes are based around cocoa butter, nuts, and chocolate. For this recipe, we’re going to be using bittersweet chocolate, some cocoa powder, and some liquid nitrogen (aka liquid nitrogen). To make the truffles, all you have to do is combine the liquid nitrogen with the chocolate. Then, you’re going to form the truffles into a ball shape. The final step is to put them in the freezer to firm them up. So, how do you get the liquid nitrogen to interact with the chocolate? To get liquid nitrogen, you’ll need to go to your local grocery store, which is going to carry liquid nitrogen in the form of nitrogen-based ice cream. You can buy this ice cream in pint-sized containers, which will give you enough liquid nitrogen to make about 12 truffles. Now, some people will suggest that you can use liquid nitrogen in other forms, like whipped cream. This is a good idea, but is a little trickier than simply pouring it into chocolate.
